Vangi Bhath

Ingredients
  

  • 1 cup Basmati Rice
  • 1/2 Eggplant large, Brinjal/Vazhuthananga
  • 2 nos Tomatoes
  • 3-4 nos Green chillies
  • 1 no Onion
  • Vangi bhath masala powder(same bisbele bhath masala)
  • Salt As reqd
  • 1 tbsp Ghee
  • Coriander leaves A bunch
  • 1/2 cup Grated coconut
  • 1/2 tsp Lemon juice
  • For seasoning:
  • 4 tbsp Oil
  • 1/2 tsp Mustard seeds
  • 1 tsp Bengal gram Kadalaparippu
  • 1 tsp Black gram Uzhunnuparippu
  • 1/2 tsp Turmeric powder

Instructions
 

  • Cook rice and keep it to cool and separate grains by adding ghee.
  • Cut eggplant, onions and chillies lengthwise(thin stripes).
  • Heat oil in a pan.
  • Add the ingredients for seasoning followed by chillies and onions. Fry till the onions become translucent.
  • Add eggplant pieces and tomatoes and fry till eggplant becomes tender.
  • Add vangi bhath masala powder.
  • Add rice, sprinkle salt and mix well.
  • Finally, add grated coconut, coriander leaves and lemon juice.
