Vegetable curry in coconut milk

Ingredients
  

  • 2 nos Potato big
  • 1 cup Cauliflower florets
  • 2 nos Carrot medium
  • 1 cup Green peas if dry, soaked overnight and boiled
  • Salt As reqd
  • 3 nos Onions thinly sliced
  • 1 piece Ginger julienned
  • 3 nos Garlic pods sliced
  • Green chillies As reqd
  • 1 no Cardamom Elakka
  • 4 nos Cloves Grambu
  • 2 small Cinnamon Karugapatta
  • 1 tbsp Oil
  • 1 1/2 tsp Coriander powder
  • 1/2 tsp Turmeric powder
  • 1 tsp Chilly powder optional
  • 2 tbsp Curd not very sour
  • 1/2 cup Thick coconut milk
  • Coriander leaves for garnishing

Instructions
 

  • Cut potatoes and carrot into small cubes and cook it in a vessel adding salt and a cup fo water.
  • Add cauliflower florets and carrot.
  • Add boiled green peas and mix well.
  • Heat 1 tbsp of oil in a kadai.
  • Add cardamom, cloves and cinnamon and saute.
  • When its flavour comes out, add the sliced onions and saute, till it is soft and golden in color.
  • Add ginger, garlic and green chillies and saute.
  • Add coriander powder, turmeric powder and chilly powder and fry for sometime.
  • If dry, sprinkle some water and cook.
  • Add the new curd and mix well till its cooked.
  • Add the cooked vegetables to this and allow it to boil.
  • Add water if necessary.
  • Add half cup thick coconut milk and mix well.
  • Heat the curry.
  • :- Do not boil.
  • :- You can add salt and chilly according to your taste.
  • Garnish with coriander leaves.
  • :- Serve hot with rotis, pulav etc.
