Step 1

Brush eggplant with oil, poke some holes on the eggplant with a fork and place it under the broiler or on the grill.

Step 2

Frequently, turn the eggplant upside down, until fully roasted.

Step 3

Cool it and peel off the blackened skin.

Step 4

Mash the flesh.

Step 5

Heat oil in a pan.

Step 6

Saute green chillies and onion until golden brown.

Step 7

Add ginger, garlic, coriander, cumin, red chili powder, turmeric powder, garam masala and salt and saute for a few secs.

Step 8

Add tomatoes and saute until oil separates.

Step 9

Add green peas, mashed eggplant and cream and saute for 5 - 7 mins over medium heat.

Step 10

Garnish with coriander leaves.

Step 11

:- If you are using fresh green peas, it has to be cooked before hand.

I tried microwaving the brinjal instead of grilling it..The taste was too good..


This came out really well especially for a first time try at baingan bharta! Pretty simple to make too. I didn`t add peas though (never had bharta with peas and was a bit wary of trying that :) )


The recipe was too good. I did n`t include the green peas. Thanks for this and I wouldn`t need to order a take-away for baigan bharta anymore. Thank you again. Maria


Came out really well!! Was a lot easier than what I thought it would take to make this. Great recipe
