Step 1

For preparing carrot masala, heat coconut oil in a vessel.

Step 2

Saute onions, ginger-garlic paste, green chillies and fennel seeds.

Step 3

Add turmeric powder, garam masala, curry leaves, coriander powder, salt and tomato. Saute well until the oil separates.

Step 4

Add in the carrots with required water. Allow it to cook on low flame till done.

Step 5

Garnish with lime juice.

Step 6

Carrot masala fry is ready. Serve hot.
