Step 1

Heat up a saucepan.

Step 2

Add condensed milk, 1 cup of water, boiled milk and sugar and heat, stirring well.

Step 3

Remove from fire, when it is about to boil.

Step 4

Wash the china grass and soak it in 1 1/2 cups of water for 10 mins.

Step 5

Boil the soaked china grass (in the same 1 1/2 cups water) until all of it dissolves.

Step 6

Remove from fire and strain.

Step 7

Pour this into the milk mixture and stir well.

Step 8

Strain it and pour it into a pudding dish.

Step 9

Add essence and whipped cream.

Step 10

Stir well and allow to set in a cool place.

Step 11

Caramelize the cashews and break into small crumbs and sprinkle over the pudding.

Step 12

Chill the pudding.

Step 13

:- Serve chilled.

Step 14

To caramelize the nuts:-
1)Heat butter and sugar and stir, till it becomes brown.

Step 15

Add a pinch of baking powder and the cashews.

Step 16

Stir, till the nuts are brown.

Step 17

Spread the nuts on a greased board.

Step 18

When cool, crush it and spread on the pudding.
