Step 1

For preparing pistachio chicken, grind the pistachio with water to a fine paste.

Step 2

SautT the onions with the chicken pieces in oil.

Step 3

Add in ginger paste, salt, pepper and a little water for the chicken to cook. Cook until done in low flame.

Step 4

Add in the pistachio paste and corn flour mixture. Mix it well.

5)Garnish with coriander leaves.

Step 5

Pistachio chicken is ready. Serve hot.

In 1971 I bought a cookbook published in 1928. Chicken in pistachio nut gravy originated in Egypt but by 1928 was only being prepared in a small area in Russia. It was my favorite until I lost the cookbook in 1976...I will be trying this recipe asap and it seems familiar now that I have seen this recipe.
