Brinjal Pakoda is a tempting snack of fried crisp fritters prepared with gram flour, corn flour, rice flour and maida flour, brinjals, herbs and spices. These vegan crispy fritters are also known as Brinjal Bajji in South Indian dialect and ‘pakodas’ in North Indian dialect. Also known as ‘Kathrika Pakoda’, the snack perfects well with hot and refreshing tea or coffee. I relish these pakodas in all seasons, however in cold monsoons, while it is raining outside, hot and crispy Brinjal Pakoda makes a wonderful choice. Rains and pakodas make a never fail combo. The uniqueness and specialty of the snack is that it is crispy on the outside and soft on the inside.
