Brinjal Pakoda is a tempting snack of fried crisp fritters prepared with gram flour, corn flour, rice flour and maida flour, brinjals, herbs and spices. These vegan crispy fritters are also known as Brinjal Bajji in South Indian dialect and ‘pakodas’ in North Indian dialect. Also known as ‘Kathrika Pakoda’, the snack perfects well with hot and refreshing tea or coffee. I relish these pakodas in all seasons, however in cold monsoons, while it is raining outside, hot and crispy Brinjal Pakoda makes a wonderful choice. Rains and pakodas make a never fail combo. The uniqueness and specialty of the snack is that it is crispy on the outside and soft on the inside. I remember my tour to Calcutta, these Brinjal Pakodas was the hot favorite in These fritters or Bajji requires only a few minutes for the preparation. Thick brinjal slices are dipped or covered in a thick spicy batter and deep fried in hot oil to a crispy golden color.

Brinjal Pakodas make a healthy alternative compared to junk foods. Serve the hot pakodas with a lip smacking green chutney and I bet you will love it. In Indian Cuisine, you will find Pakoras prepared from a wide variety of vegetables like potato, spinach, onion, capsicum etc. These crunchy pakodas are nostalgic relished with a cup of hot chai. These pakodas have a mildly sweet flavored texture from the inside and a crispy outside texture. I suggest using small to medium sized brinjals for preparing the snack. If you are using large brinjals, chop them into bite sized pieces. Also select fresh brinjals for the dish. Brinjals are rich in vital nutrients required for body.   • First cut the brinjal in thick round shapes.
  • Add ginger garlic paste to pepper and make a fine paste.
  • In a bowl add ginger garlic paste, besan flour, rice flour, maida, corn flour, red chili powder, salt and turmeric.
  • Add water and make a thick batter.
  • Add brinjal and mix it.
  • Add sliced onion, curry leaves and mix well
  • Heat oil in a pan and fry the brinjal slices until it gets golden brown and crispy.
  • Now the delicious bajji is ready to serve.
