Egg masala curry with coconut milk is a tasty kerala style egg curry in coconut milk. Boiled eggs simmered in coconut milk,pepper powder and spicy masala gives a tasty side dish very quickly. It is mostly served for breakfast with Appam,Noolputtu etc.

Instructions
  1. Take all the ingredients and keep it ready.
  2. Heat oil in a vessel and saute onion for 5 minutes.
  3. Add tomato,green chilly,garlic,ginger,coriander leaves,dry red chilly,curry leaves and saute for 4-5 minutes
  4. When it is soft add garam masala,turmeric powder,salt and saute for 2 minutes.
  5. Add thin coconut milk and bring it to boil.
  6. Add egg pieces.
  7. Add thick coconut milk and pepper powder and cook again for 2 minutes.
  8. Egg masala curry with coconut milk is ready.
