Instructions
  1. Wash kovakka and drain. Cut off the stem and slice into long pieces. Ripe ones should be discarded.
  2. Heat oil and splutter mustard seeds. Add chopped shallots, crushed red pepper, garlic and the coconut pieces.
  3. Saute well until the shallots are golden brown. Add turmeric powder.
  4. Stir and add the kovakka/tindora slices. Add required salt and cook in medium flame until done.
  5. Do not add water and let any remaining water dry completely.
  6. Your Tindora fry is ready and serve hot with rice.
