Lady`s finger/bhindi/vendakkai pieces are fried and cooked in
coconut
milk
and other ingredients

cut into 1 1/2 inch pieces

Coconut
milk

Curry leaves

cup
Shallots/small onions
Kunjulli

Green chillies
slit

Gharam masala powder
1 1/4
tsp
Coriander powder
3/4
tsp
Red chilly powder
Ginger
chopped

tsp
Saffron
powder
1
tbsp
Coriander leaves
chopped
1 1/2
tbsp
Oil
Salt
As reqd
Instructions
For preparing lady¦s finger/bhindi in
coconut
curry, first fry the ladies finger pieces in
oil
till it turns to golden brown in color. Keep this aside.
In the remaining
oil
, saute shallots,
green chillies
,
curry leaves
and
ginger
for a few minutes.
Stir in the fried ladies finger, gharam masala powder, chilly powder,
saffron
powder and
coriander powder
.
Mix well and fry till the masala is well coated on the bhindi pieces.
Pour
coconut
milk
and boil for few minutes.
Garnish with coriander leaves. Lady¦s finger/bhindi in
coconut
curry, is a yummy as well as nutritious recipe.Serve hot with rice, chappathi etc.
