Malabar Special Chicken Fry is a tasty side dish, a delectable blend of aromatic spices and herbs, very popular in Malabar region. Malabar Kozhi Pozhichathu is awesome and a real perfect dish for special occasions and functions. Using country/nadan chicken will enhance the taste and flavor of the dish. Corn flour is used to tenderize the chicken and is also preferred as a binder for the masala. Malabar Kozhi Porichathu is a typical Mappila chicken fry preparation requiring simple easily available ingredients. This is my favorite dish as accompaniment to Malabar Nei Chor and dal. During my last visit to Malabar region, I had this combination lunch at a restaurant. Since then I was in search for the recipe. Got it from my friend and since then Malabar Special Chicken Fry has been the star of my home. Its’ a very simple recipe as not much of cooking time required and hence when you run out of time this recipe definitely will help you.

Malabar Kozhi Porichathu is a flavorful spicy chicken starter made with a mix of different spices and garnished with the goodness of curry leaves, ginger and garlic. For best results use coconut oil for frying that will enhance the flavor. Good old days, the chicken fry you got in thattukadas was so tasty. Now a days you need to be lucky to get that kind of taste. So I was trying to recreate the taste and I believe this recipe could accomplish the magic.   • For preparing the dish, first clean chicken and cut into small pieces.
  • Marinate chicken pieces with a mixture of salt, lemon juice, corn flour, garam masala, red chilly powder and turmeric powder. Keep it aside for 30 minutes.
  • Heat oil in a pan and fry the chicken pieces to a brown colour. Once the chicken is done remove from oil and keep aside.
  • Heat 2 tbsp oil in a pan and add chopped ginger and garlic. Saute for 2 minutes.
  • Then add green chillies and curry leaves, saute for few seconds.
  • Finally add fried chicken and mix well. Remove it from flame.
  • Serve Malabar Chicken Fry hot.
