  • Pistachio(soaked in water overnight) - 1 cup
  • Onions(finely chopped) - 2 nos
  • Ginger Paste - 1 tsp
  • Corn flour(mixed in 4 tbsp of water) - 1 tbsp
  • Pepper powder - 1/2 tsp
  • Coriander leaves(finely chopped) - 4 springs
  • Oil(As reqd) -

Instructions
  1. For preparing pistachio chicken, grind the pistachio with water to a fine paste.
  2. SautT the onions with the chicken pieces in oil.
  3. Add in ginger paste, salt, pepper and a little water for the chicken to cook. Cook until done in low flame.
  4. Add in the pistachio paste and corn flour mixture. Mix it well. 5)Garnish with coriander leaves.
  5. Pistachio chicken is ready. Serve hot.

In 1971 I bought a cookbook published in 1928. Chicken in pistachio nut gravy originated in Egypt but by 1928 was only being prepared in a small area in Russia. It was my favorite until I lost the cookbook in 1976…I will be trying this recipe asap and it seems familiar now that I have seen this recipe.
