  • Mushrooms(chopped) - 225 g
  • Coconut milk - 2 1/2 cups
  • Red curry paste - 1 tbsp
  • Fish sauce(if reqd) - 3 tbsp
  • Palm sugar - 2 tsp
  • Cottage cheese(cubed, Paneer) - 175 g
  • Lime leaves(torn) - 4 nos
  • Red chillies(slit) - 2 nos
  • Coriander leaves(chopped) - 2 springs

Instructions
  1. For preparing potato with mushroom and cottage cheese, pour 1 1/2 cups of the coconut milk in a vessel. Cook until an oily sheen appears on top.
  2. Add the red curry paste, salt, fish sauce and palm sugar to the coconut milk. Mix well.
  3. Toss in the mushrooms. Mix well and cook over a medium heat for about 1 minute.
  4. Pour in the remaining coconut milk and allow it to boil.
  5. Add the potato and paneer and allow to simmer gently till potato is done.
  6. Stir in the lime leaves and red chillies.
  7. Garnish with coriander leaves.
  8. Potato with mushroom and cottage cheese is ready.
