Step 1

Add little oil in frying pan. Add jeera, urad dal and red chillies. Fry for a few seconds till urad dal turns brown.

Step 2

Then, add peanuts and fry till light brown. Add grated coconut and fry till light brown.

Step 3

Add all the ingredients except brinjal and tamarind paste/water and fry for a few seconds. Turn off stove. Wait for it to cool and then grind the mixture.

Step 4

You will have a lot of mixture but do not worry.

Step 5

Slit brinjal/baingan so you can stuff the above ground mixture into the brinjal. There should be extra mixture left for the gravy.

Step 6

Heat oil in the pan and fry the stuffed brinjal for a few minutes and add the remaining ground mixture and tamarind water. Cover it with lid and cook for 5-10 mins.

Step 7

Brinjal Peanut Gravy is ready :)
