Add little oil in frying pan. Add jeera, urad dal and red chillies. Fry for a few seconds till urad dal turns brown.
Then, add peanuts and fry till light brown. Add grated coconut and fry till light brown.
Add all the ingredients except brinjal and tamarind paste/water and fry for a few seconds. Turn off stove. Wait for it to cool and then grind the mixture.
You will have a lot of mixture but do not worry.
Slit brinjal/baingan so you can stuff the above ground mixture into the brinjal. There should be extra mixture left for the gravy.
Heat oil in the pan and fry the stuffed brinjal for a few minutes and add the remaining ground mixture and tamarindwater. Cover it with lid and cook for 5-10 mins.
