  • 6 nos Baby baingan

  • Add little oil in frying pan. Add jeera, urad dal and red chillies. Fry for a few seconds till urad dal turns brown.
  • Then, add peanuts and fry till light brown. Add grated coconut and fry till light brown.
  • Add all the ingredients except brinjal and tamarind paste/water and fry for a few seconds. Turn off stove. Wait for it to cool and then grind the mixture.
  • You will have a lot of mixture but do not worry.
  • Slit brinjal/baingan so you can stuff the above ground mixture into the brinjal. There should be extra mixture left for the gravy.
  • Heat oil in the pan and fry the stuffed brinjal for a few minutes and add the remaining ground mixture and tamarind water. Cover it with lid and cook for 5-10 mins.
  • Brinjal Peanut Gravy is ready 🙂
