Step 1

Make a smooth paste with the chilly powder, turmeric powder, garlic, salt, black pepper powder and water as required.

Step 2

:- It should come out as a smooth paste.

Step 3

Scrap the bitter gourd and cut them into semi thick slices and place them on a plate and sprinkle with turmeric powder. Keep aside for 1 hr.

Step 4

Take the bitter gourd pieces and pat dry them and marinate them with the smooth paste.

Step 5

Deep fry them in oil.

Step 6

:- The paste should be marinated on the bitter gourd like we marinate fish for frying.

I added chopped tomatoes, shredded coconut, cumin powder, ajwain seeds and hing(kayam) to the bitter gourd. Tasted even better!
