Step 1

For preparing caramel ice-cream, heat water with 100g of sugar to make a brown caramel.

Step 2

Boil the milk and remove it from the flame.

Step 3

Mix the caramel with the milk.

Step 4

Whisk egg yolks and the remaining sugar well.

Step 5

Pour in the hot caramel milk to it and whisk again.

Step 6

Heat the mixture, stirring it continuously till it thickens. Allow it to cool.

Step 7

Add in the cream and whip the mixture.

Step 8

Pour it into an ice-cream churner and freeze it.

Step 9

Caramel ice-cream is ready. Serve chilled.
