1/2 litre Milk5 nos Egg yolks180 g Sugar100 g Cream For preparing caramel ice-cream, heat water with 100g of sugar to make a brown caramel.Boil the milk and remove it from the flame.Mix the caramel with the milk.Whisk egg yolks and the remaining sugar well.Pour in the hot caramel milk to it and whisk again.Heat the mixture, stirring it continuously till it thickens. Allow it to cool.Add in the cream and whip the mixture. Pour it into an ice-cream churner and freeze it.Caramel ice-cream is ready. Serve chilled. Continental
