Step 1

Preheat the oven to moderate 180c ((350f/ Gas 4).

Step 2

Lghtly grease a 20x30cm baking tin and line with baking paper, hanging over the two long sides.

Step 3

Place the dates in a saucepan with 200 ml of water.

Step 4

Bring to a boil, then reduce the heat and simmer gently for 10 mins.

Step 5

:- Make sure the water doesn`t evaporate completely.

Step 6

Add the bicarbonate of soda and leave to cool.

Step 7

Place 185 g of the butter, the flour, vanilla, baking powder, eggs and 75 ml of the milk in a food processor and mix in short bursts for 1 min, or until well blended.

Step 8

Add the dates and pulse to blend.

Step 9

:- DO not overprocess!

Step 10

Place the mixture in the tin and bake for 20 mins, or until a skewer inserted in the centre comes out clean.

Step 11

Set aside to cool.

Step 12

Place the remaining butter and milk and the brown sugar in a pan and heat gently to dissolve the sugar.

Step 13

Add the icing sugar and mix well.

Step 14

Spread over the cooled slice and sprinkle with the walnuts.


its really nice recipe, dates are full of iron and i always wanted to bake date cake,becoz otherwise none at home eats dates, and this is the first time iam trying with your recipe and it turned out to be really great and lip smacking! thanks alot for the posting.

i had plenty of dates at home,thought i shall bake a date cake n started browsing n saw this recipe,its really fantabulous! its really very tasty,it took very less time to prepare it,i will make it often now! i suggest everyone shud try this date cake,its a `must bake` cake!!!


here in dubai we get plenty of dates and never tried making anything with dates...firstime, i tried this sticky toffee slice date cake and it came out so damn good,,,it was lip smacking...and the cake was over the same day!!! Thanks alot for posting this recipe...which made me a great baker!!! i got plenty of praises from all who tasted my date cake!!!!! Thanx once again Ritu Sanjai! do post in more of cakes!!!
