  • Pitted dates(roughly chopped) - 250 gm
  • Bicarbonate of soda - 1 tsp
  • Unsalted butter - 215 gm
  • Self raising flour(185 g) - 1 1/2 cups
  • Vanilla Essence - 1 tsp
  • Baking powder - 1 tsp
  • Eggs - 3 nos
  • Milk - 90 ml
  • Soft brown sugar - 2 tbsp
  • Icing sugar(90 g) - 3/4 cup
  • Walnuts(90 g, chopped) - 3/4 cup

Instructions
  1. Preheat the oven to moderate 180c ((350f/ Gas 4).
  2. Lghtly grease a 20x30cm baking tin and line with baking paper, hanging over the two long sides.
  3. Place the dates in a saucepan with 200 ml of water.
  4. Bring to a boil, then reduce the heat and simmer gently for 10 mins.
  5. :- Make sure the water doesn`t evaporate completely.
  6. Add the bicarbonate of soda and leave to cool.
  7. Place 185 g of the butter, the flour, vanilla, baking powder, eggs and 75 ml of the milk in a food processor and mix in short bursts for 1 min, or until well blended.
  8. Add the dates and pulse to blend.
  9. :- DO not overprocess!
  10. Place the mixture in the tin and bake for 20 mins, or until a skewer inserted in the centre comes out clean.
  11. Set aside to cool.
  12. Place the remaining butter and milk and the brown sugar in a pan and heat gently to dissolve the sugar.
  13. Add the icing sugar and mix well.
  14. Spread over the cooled slice and sprinkle with the walnuts.
