Step 1

For preparing duck curry with mushrooms, pour half of the coconut milk into a wok vessel over a medium flame. Bring the coconut milk to the boil, stirring constantly until it has separated.

Step 2

Add the red curry paste and cook the mixture for 3 minutes. Stir the paste all the time to prevent it sticking on the bottom of the pan.

Step 3

Add the duck pieces, fish sauce and sugar to the pan. Stir well and allow it to cook on low flame.

Step 4

Continue to stir to prevent the mixture from sticking to the base of the pan.

Step 5

Then add the coconut milk, mushrooms and lime leaves. Allow it to boil over a medium flame, stirring it constantly to prevent the mixture from sticking.(add salt if required)

Step 6

Duck curry with mushrooms is ready. Serve hot with rice.
