Step 1

For preparing egg baji, take the boiled eggs and remove the shell. Cut each egg into two halves.

Step 2

Take a bowl and stir in all the ingredients: gram flour, corn flour, red chilly powder,ginger-garlic paste and green chilly paste. Prepare a dough using water.

Step 3

Divide the dough into 16 balls.
Add the egg halves into each dough ball and allow to settle for a while.

Step 4

Meanwhile heat oil in a deep bottomed pan. Add the egg pieces covered with adequate dough, to the oil, one by one and deep fry on medium flame. Remove the bajjies from the oil.

Step 5

In the same oil, fry curry leaves.

Step 6

Serve the egg Bajjies into a plate and top them with fried curry leaves.

Step 7

Egg baji ir ready. Serve hot with ketchup.
