Step 1

Hard boil the eggs and shell them.

Step 2

Halve the eggs and keep them aside.

Step 3

Heat 2 tbsp of oil in a frying pan.

Step 4

Fry onions, till they turn golden in colour.

Step 5

Add ginger-garlic paste and fry, till the onions get a deeper shade of golden colour.

Step 6

Add tomatoes and cook on high flame, till it becomes a puree.

Step 7

Add water as and when necassary (else its likely to burn).

Step 8

Once you get a smooth thick gravy, add chilly powder and garam masala and fry for a few more seconds.

Step 9

Add kasoori methi and amchoor powder.

Step 10

Add eggs.

Step 11

:- If you want slightly thinner gravy, add water and bring to boil again.

Step 12

Garnish with coriander leaves and pudina leaves.

Step 13

:- Serve piping hot with rotis or rice!
