  • Hard boiled eggs - 4 -
  • Onions(sliced, big) - 2 nos
  • Tomatoes(chopped, big) - 3 nos
  • Red chilly powder - 1 tsp
  • Garam masala - 1 tsp
  • Ginger(garlic paste - 2 tbsp) -
  • Kasuri methi(A pinch) -
  • Amchoor powder(A pinch) -
  • Coriander leaves(A bunch, chopped) -
  • Mint leaves(A few, Pudhina) -
  • Oil - 2 -
  • Salt(As reqd) -

Instructions
  1. Hard boil the eggs and shell them.
  2. Halve the eggs and keep them aside.
  3. Heat 2 tbsp of oil in a frying pan.
  4. Fry onions, till they turn golden in colour.
  5. Add ginger-garlic paste and fry, till the onions get a deeper shade of golden colour.
  6. Add tomatoes and cook on high flame, till it becomes a puree.
  7. Add water as and when necassary (else its likely to burn).
  8. Once you get a smooth thick gravy, add chilly powder and garam masala and fry for a few more seconds.
  9. Add kasoori methi and amchoor powder.
  10. Add eggs.
  11. :- If you want slightly thinner gravy, add water and bring to boil again.
  12. Garnish with coriander leaves and pudina leaves.
  13. :- Serve piping hot with rotis or rice!
