Ingredients
  

  • 4 nos. Hard boiled eggs
  • 2 nos Onions sliced, big
  • 3 nos Tomatoes chopped, big
  • 2 tsp Red chilly powder
  • 1 tsp Garam masala
  • 1 tbsp Ginger Garlic Paste
  • Kasuri methi A pinch
  • Amchoor powder A pinch
  • Coriander leaves A bunch, chopped
  • Mint leaves A few, Pudhina
  • Oil As reqd
  • Salt As reqd

Instructions
 

  • Hard boil the eggs and shell them.
  • Halve the eggs and keep them aside.
  • Heat 2 tbsp of oil in a frying pan.
  • Fry onions, till they turn golden in colour.
  • Add ginger-garlic paste and fry, till the onions get a deeper shade of golden colour.
  • Add tomatoes and cook on high flame, till it becomes a puree.
  • Add water as and when necessary (else its likely to burn).
  • Once you get a smooth thick gravy, add chilly powder and garam masala and fry for a few more seconds.
  • Add kasoori methi and amchoor powder.
  • Add eggs.
  • :- If you want slightly thinner gravy, add water and bring to boil again.
  • Garnish with coriander leaves and pudina leaves.
  • :- Serve piping hot with rotis or rice!
