Healthy Chicken Biriyani (Kozhi Biryani)

Chicken biriyani cooked in a simple style

Ingredients
  

  • 1/2 kg Chicken washed and cut into medium sized pieces
  • 2 cups Rice Basmati
  • 3 cups Water
  • 4 nos Onion chopped length wise, medium
  • 2 Tomatoes diced
  • 4 nos Green chilies
  • 1 small Coriander leaves
  • 1 small Mint leaves
  • Ginger garlic paste - 3 tbsp
  • 5 nos Bay leaves
  • 4 nos Cloves
  • 4 nos Cardamom Elakka
  • 4 one Cinnamon sticks
  • 2 tbsp Ghee
  • 3 tbsp Vegetable oil
  • Salt As reqd

Instructions
 

  • Soak basmati rice in some water and keep aside. Drain nicely after 15 minutes. Heat ghee in a pressure cooker.
  • Add rice and fry till rice starts changing color. Remove from fire and keep this aside.
  • Boil 2 cups water and add 1 1/2 tsp salt. Keep aside.
  • Grind together green chilies, coriander leaves and mint leaves to a course paste and keep aside.
  • Heat oil in the same pressure cooker and add cardamom, cinnamon sticks and cloves and sautT for a minute.
  • Add onions and fry till onions turn golden brown.
  • Add tomato and cook covered till the tomatoes turn pulpy.
  • Add ginger-garlic paste followed by the ground paste.
  • Add the chicken pieces and saute for some time. Add bay leaves and required salt.
  • Add remaining hot water and stir the fried rice into the gravy. Close the cooker lid and cook for 5 minutes.
  • After the steam settles by itself, open the lid and mix slightly.
  • Healthy chicken biriyani is ready and serve hot with raitha.
