Healthy Chicken Biriyani (Kozhi Biryani)
Chicken biriyani cooked in a simple style

washed and cut into medium sized pieces

cups
Rice
Basmati
3
cups
Water

Onion
chopped length wise, medium

Tomatoes
diced
4
nos
Green chilies
1
small
Coriander leaves
1
small
Mint leaves
Ginger
garlic
paste - 3 tbsp

Bay leaves
4
nos
Cloves
4
nos
Cardamom
Elakka
4

Cinnamon sticks
2
tbsp
Ghee
3
tbsp
Vegetable
oil
Salt
As reqd
Instructions
Soak basmati rice in some
water
and keep aside. Drain nicely after 15 minutes. Heat
ghee
in a pressure cooker.
Add rice and fry till rice starts changing color. Remove from fire and keep this aside.
Boil 2 cups
water
and add 1 1/2 tsp
salt
. Keep aside.
Grind together green chilies, coriander leaves and
mint leaves
to a course paste and keep aside.
Heat
oil
in the same pressure cooker and add
cardamom
, cinnamon sticks and
cloves
and sautT for a minute.
Add onions and fry till onions turn golden brown.
Add
tomato
and cook covered till the tomatoes turn pulpy.
Add
ginger
-
garlic
paste followed by the ground paste.
Add the chicken pieces and saute for some time. Add bay leaves and required
salt
.
Add remaining hot
water
and stir the fried rice into the gravy. Close the cooker lid and cook for 5 minutes.
After the steam settles by itself, open the lid and mix slightly.
Healthy chicken biriyani is ready and serve hot with raitha.
