Step 1

Mix together the maize flour and salt in a big vessel.

Step 2

Make a hole in the centre.

Step 3

Add little water at a time and oil and knead well into a soft pliable dough.

Step 4

:- Make sure it is not sticky.

Step 5

Make medium sized balls off the above dough.

Step 6

Roll each ball into rotis of about 5" in diameter.

Step 7

Heat a griddle on medium fire.

Step 8

Put each roti on the griddle.

Step 9

Cook the first side for about a min or so.

Step 10

Spread a little ghee on top and flip the sides.

Step 11

Fry again for a minute or so and turn again.

Step 12

Continue to do this till the roti is crisp and golden on both the sides.

Step 13

Drizzle with ghee or butter if desired.

Step 14

:- Serve hot with sarson ka saag and onion and lime slices.
