Step 1

Separately dry roast the til, kopra and peanuts.

Step 2

Grind them to a fine paste each one separately.

Step 3

Slit the chillies.

Step 4

Heat oil in a pan or a kadai.

Step 5

Splutter the mustard seeds, kalonji and methi seeds.

Step 6

Add the chilles and curry leaves and fry for while.

Step 7

Add chilly powder and keep stirring.

Step 8

Add the ground pastes and keep stirring.

Step 9

Add the cumin powder, coriander powder and mix all these together.

Step 10

After 5 mins, add the tamarind water.

Step 11

Wait for 10 mins and add the tomatoes.

Step 12

Close the lid and let this cook for 1/2 hr.

Step 13

:- This recipe can be followed for making Bhagara baigan expect for a slight variation. Tomatoes are avoided.
