Step 1

Heat ghee in a wok.

Step 2

Add all ingredients for grinding except the grated coconut.

Step 3

Saute well till fine aroma comes.

Step 4

Grind to a fine paste.

Step 5

Saute coconut separately for a few minutes.

Step 6

:- Ddo not let it become red or brown.

Step 7

Grind together the coconut and the rest of the grinding ingredients into a coarse paste adding a little water, as required.

Step 8

Meanwhile, cook pressure cook vegetables, red gram, green chillies and turmeric.

Step 9

Add ground paste to cooked dal.

Step 10

Add the tamarind paste at this time. Mix well.

Step 11

Simmer for 2 mins.

Step 12

Heat oil and the ghee in a small wok and prepare the seasoning.

Step 13

Finally, add seasoning to the sambar and switch off gas.

Step 14

Close with lid for a few minutes.

Step 15

:- Serve hot with Idly, Dosa or hot rice.

Step 16

:- The good thing about this sambar is that is has no tomatoes, and isnt really sour and has very little dal in it, yet tastes amazing!
