Step 1

Take a pan and place the pickling onions. Pour some water and boil the onions. When done, drain and cut into halves.

Step 2

For preparing marinade, place red chillies, garlic, basil, oregano, red wine and olive oil in a vessel. Toss well to combine.

Step 3

Add eggplant, onions, zucchini, red pepper, button mushrooms and cherry tomatoes to the marinade and combine well.

Step 4

Marinate the above ingredients at room temperature for 45 minutes.

Step 5

Drain the veggies and preserve the marinade.

Step 6

Thread the vegetables onto oiled skewers and cook in a preheated barbeque grill, basting occasionally with marinade on both sides, for 5 minutes.

Step 7

Yummy ratatouille recipe is ready and serve hot.
