Step 1

For preparing teasel gourd (Aakaakarakai)fry, cut the tiesel gourds into thin lengthy slices.

Step 2

Put a deep bottomed frying pan on the stove, add some oil and heat.

Step 3

Splutter mustard seeds and fry green chillies and finely chopped onions. Fry until they turn dark brown in color.

Step 4

Add the curry leaves and teasel gourd slices, mix well and fry for a few minutes. Add enough salt and mix well.

Step 5

Add some more oil and fry them stirring constantly until the teasel gourd pieces turn into deep brown.

Step 6

Sprinkle chopped coriander leaves over the preparation and serve hot with rice or pulka or pan cakes.
