500 g Teasel gourd1 cup Onion (chopped)2 nos Green chillies (split)1 tsp Red chilly powder1 tsp Mustard seeds1 tsp Coriander seed powder200 ml Refined oil2 sprigs Curry leaves1 cup Coriander leaves (chopped)Salt (As reqd) For preparing teasel gourd (Aakaakarakai)fry, cut the tiesel gourds into thin lengthy slices.Put a deep bottomed frying pan on the stove, add some oil and heat.Splutter mustard seeds and fry green chillies and finely chopped onions. Fry until they turn dark brown in color.Add the curry leaves and teasel gourd slices, mix well and fry for a few minutes. Add enough salt and mix well.Add some more oil and fry them stirring constantly until the teasel gourd pieces turn into deep brown.Sprinkle chopped coriander leaves over the preparation and serve hot with rice or pulka or pan cakes.
