For preparing Akkini, firstly marinate the cleaned chicken pieces with turmeric, chilli powder ,yogurt and salt. Pressure cook the marinated chicken pieces along with onions, ginger, garlic paste,coriander leaves and one tbsp of ghee. When one whistle is done, switch off the flame. Let the pressure go down, open the lid.
Heat 4 tbsp of oil in a pan, fry the cooked chicken pieces and keep it aside.
Heat ghee in a wide pan and splutter all the spices and add the washed and drained rice, fry for a minute.
Wash and cook the bengal gram dal. Fry the potato and keep it aside.
Then add the fried chicken pieces, cooked bengal gram dal, fried potato pieces,coriander leaves and the chicken gravy to the fried rice. Add 2 -3 cups of water and more salt, if required. Cover and cook on low flame till the chicken pieces and rice are mixed well and done. Check and stir occasionally.
Akkini is ready. Serve hot with raitha or dates chutney.
