Aloo Gobi / Cauliflower Potato Curry

Aloo gobi / Cauliflower Potato Curry is a popular Indian dish in which potatoes and cauliflower are cooked with onions, tomatoes and spices. This dish can be made in several ways, you can make it with only onions or only tomatoes or use no onion-tomato at all. This is packed with flavors, super comforting, vegan and simply the best curry you will ever have. This is dry sabzi and goes very well with rotis, chapatis or bread. It can also be had as a side vegetable dish with the main course of dal-rice. It's a one pot, super simple, comforting dish that's ready in 30 minutes flat. Full of flavor, you'll be making it every night.

Ingredients
  

  • Medium size cauliflower/
  • Gobi chopped into medium florets : 1 no
  • Potatoes : 2 nos
  • Onion finely chopped : 1 no
  • Tomatoes chopped : 2 no
  • Ginger finely chopped : ½ tsp
  • 3 nos Green chilies slit length wise : 2
  • Turmeric powder : ½ tsp
  • Coriander & cumin powder : ½ tsp
  • Red chili powder : ½ tsp
  • Garam masala powder : ½ tsp
  • Whole cumin seeds : 1 tsp
  • Oil : 2 tsp
  • Coriander leaves : for garnish
  • Salt to taste

Instructions
 

  • Cut the cauliflower/gobi into medium florets and cube the potatoes.
  • Keep the green leaf part of the stem of the cauliflower/gobi as well.
  • Heat oil in a pan/kadai and add the whole cumin seeds / jeera.
  • When the jeera turns brown add the chopped onions and slit green chilies and sauté for 3-4 minutes. Add the chopped ginger and mix well.
  • Add the chopped tomatoes and all the dry masala powders and salt and cover the pan and cook till the oil separates from the masala.
  • Add the cut aloo and gobi and ½ cup water and cook covered for 15-20 minutes till done.
  • Garnish with coriander and serve hot.
