Mustard seeds
Cumin seeds
A little, Jeerakam
Curry leaves
A few
Asafoetida
A pinch, Kayam
Turmeric powder
A pinch
Salt
As reqd
Oil
for frying

For the Batter:
1 1/2
cups
Gram flour
Kadala podi
1/2
cup
Wheat flour
Cumin powder
A pinch, Jeerakam
Coriander powder
A pinch
Red chilly powder
A pinch
Salt
As reqd
Instructions
For making the filling: 1)Boil the potatoes.
Peel them off and cut them into small pieces.
Put chillies,
garlic
,
ginger
and some coriander into the mixer and grind them to a fine paste.
Heat
oil
in a pan.
Add
mustard seeds
,
cumin seeds
, asafoetida and
curry leaves
.
Add finely chopped chillies and saute.
Add
turmeric powder
.
Add potatoes and
salt
.
Stir well and cook for two minutes.
Add the ground paste and stir well.
Make small round balls of the above mixture and keep them aside.
For making the Batter: 1)Mix together
gram flour
or besan and
wheat flour
.
Add all the powders together and make a smooth batter.
For making aloo vada: 1)Dip the
potato
balls into the batter and fry them till they become golden brown in colour.
:- Serve hot with fried
green chillies
or
coconut
chutney.
