Ammini Kozhukattai are ideally rice flour dumplings that are steamed, cooked and later tossed in a tempering for additional flavors. Very little oil is used in its preparation, hence it makes for a healthy and light snack.They can be made both sweet or spicy depending on your preference. It is usually prepared during Ganesha Chathurthi. Usually this is done with leftover rice flour dough after making kozhukattais and leftover filling from uppu kozhukattai. It is also a yummilicious traditional Tamil breakfast recipe. In this recipe the small rice flour balls are first steamed and then tampered. Mani means beads and these kozhukattais do look like small beads. These mani kozhukattai are also known as undrallu guggillu in Andhra Pradesh.
