Take maida into a wide bowl, add butter, four to five table spoons of ghee, baking soda, baking powder and mix well to prepare a thick dough. Add some more ghee if need be.
Kneed the dough till it becomes soft. Prepare about four inch rounds, some what thick discs. Make slight depression at the center of each disc.
Add sugar and 1 1/2 cup of water to a thick bottomed vessel and heat till a medium consistency syrup is formed. Add cardamom powder and stir well.
To a deep bottomed and wide pan, add enough ghee for deep frying and heat.
Add the discs one by one and deep fry till they turn deep brown.
Transfer the fried discs into the sugar syrup and allow to soak for about fifteen minutes. Remove and serve hot.
