Aval Payasam, also known as Poha Kheer, is a cherished traditional dessert in Indian households

Ingredients
  

  • 250 g Aval (Red rice flakes)
  • 1 1/2 Litre Milk
  • 1 Cup Condensed milk
  • 25+25 grms Sugar
  • 100 g Butter
  • little Salt

Instructions
 

  • Dry roast the aval until crisp. Roast in low to medium flame. Do not change the colour.
  • Then pour cold water into it and soak for 10 minutes.
  • Mean time boil milk.
  • When it starts to boil, add 25 grams of butter and mix well. Reduce the flame and keep stirring.
  • Caramelize 25gms of sugar by adding 50g of butter.
  • Keep the flame low and stir occasionally. Whisk until the butter has melted.
  • Meantime, add the soaked and drained aval into the boiling milk or payasam.
  • Combine well and cook for 10 minutes. Keep this aside.
  • Meanwhile, continue with the process of caramelizing. Lower the heat a bit to keep the sugar from burning.
  • Pour the caramelised sugar into the payasam.
  • Add remaining Sugar and stir until they dissolve. 
  • Pour condensed milk and continue stirring.
  • Finally add the remaining butter .
  • Add little salt and mix
  • Cook the aval until it is soft. When the Payasam starts thickening switch off the flame.
  • Delicious Payasam is now ready to serve.
