  • Roast the brinjal on a medium flame till well cooked. When the skin has charred completely, peel and mash well.
  • Heat the oil in a pan.
  • Add onion and saute till it turns light brown.
  • Add minced garlic, ginger, green chillies and saute well.
  • Add chopped tomatoes and saute well.
  • Add mashed brinjal and saute for 2 - 3 minutes.
  • Remove into an airtight container and keep the burning coal on the top of the brinjal.
  • Keep the cloves on top of the burning coal and put ghee on the top of the coal and cloves.
  • Close the container tightly and don’t allow the smoke to go outside of the container.
  • After 5 minutes open the container. Remove the cloves and coal. Mix well.
  • :- Serve with chapati or rice.
