Baingan roast bajji is a simple and easy stir fry curry with the taste of Indian spices. It is healthy and smells good. This goes well with rotis, chappathi and even rice.

Instructions
  1. Roast the egg plant directly into the flame
  2. roast the egg plant until it get black skin and get boil inside in a medium flame
  3. remove that black skin from egg plant by using water
  4. remove the black skin from all the egg plant
  5. chop the small onion, red chilli, garlic and smash the egg plant
  6. in pan heat the oil,and temper the mustard, broken black gram, fennel seed, red chilli, curry leaves. and add onion and garlic and saute it until the onion turn into brown
  7. add salt and turmeric powder and mix well
  8. add tamarind water and allow to boil for 5 min in medium flame
  9. now add smashed egg plant and mix well
  10. allow to boil for 10 to 15 min in medium flame
  11. baingan roast bajji is ready to serve. serve with hot rice
