  • Mushrooms(large) - 5 nos
  • Breadcrumbs(oat bread or whole wheat bread, dried) - 1 tbsp
  • Parmesan cheese(grated) - 1/2 tbsp
For the mushroom filling:
  • Ricotta cheese - 1/4 cup
  • Red onion(chopped) - 1 tbsp
  • Tomatoes(chopped, soaked in warm water) - 2 nos
  • Basil(chopped) - 1/2 tbsp
  • Lemon juice - 1/2 tsp
  • Chives(chopped) - 1/2 tbsp
  • Black pepper(As reqd) -

Instructions
  1. Remove the stem part of all mushrooms so as to create a hollow space in the centre.
  2. For preparing the mushroom filling, take a bowl and combine ricotta cheese, onion, tomatoes, basil, lemon juice, chives and pepper.
  3. Take a baking tray and line the inside with baking paper.
  4. Spoon fill the ricotta filling inside each mushroom.
  5. Meanwhile combine grated parmesan cheese and dried bread crumbs. Sprinkle this over the mushrooms.
  6. Place the mushrooms in a preheated oven and bake for 15 minutes or until the top portion turns golden.
  7. Baked mushrooms with ricotta cheese is ready and serve hot.
