  • Sweet corn kernels - 1 cup
  • Freshly ground black pepper powder - ½ tsp
  • Soda bi carbonate - ½ tsp
  • Sugar - 1 tsp
  • Salt(as reqd) -
  • Mozzarella cheese - ½ cup

Instructions
  1. To prepare the spinach:1) Clean, chop and wash spinach / palak. Add salt, sugar and soda bi-carbonate and steam in the microwave. Blanch the spinach in cold water and drain out the excess water.
  2. To make white sauce : 2) Melt butter in a pan. Whisk in flour and stir continuously until smooth, about 2-3 minutes making sure there are no lumps formed. This is called a roux.
  3. Pour in the milk gradually stirring all the while until the sauce thickens.
  4. When the sauce has thickened add salt, freshly ground black pepper and grated nutmeg and mix well.
  5. Add the corn kernels and cook for 2-3 minutes.
  6. Add the prepared spinach to the corn and cook on medium flame for another 2-3 minutes. 7) Transfer this to a baking dish and sprinkle with grated cheese.
  7. Bake in a preheated oven at 250 °C for 10-15 minutes till the cheese melts and turns golden brown.
