Dry ingredients:-
  • Allpurpose flour(Maida) - 3 cups
  • Baking soda - 1 tsp
  • Salt - 1 tsp
  • Baking powder - 1/2 tsp
  • Cinnamon(ground, Karugapatta) - 1/2 tsp
  • Nutmeg(ground)(Jathikka) - 1/2 tsp
  • Sugar - 2 cups
Wet ingredients:-
  • Veg oil - 1 cup
  • Eggs(large) - 2 nos
  • Vanilla extract - 1 tbsp
  • Fruits: -
  • Ripe bananas(peeled and coarsely mashed) - 5 nos
  • Golden raisins(Onakka munthiri) - 1/2 cup

Instructions
  1. Line 18 muffin cups with paper liners.
  2. Preheat the oven to 325 degrees F.
  3. Sift the dry ingredients together.
  4. Whisk the wet ingredients in a large bowl to blend.
  5. Stir in the banana and raisins.
  6. Add the dry ingredients and stir, until blended.
  7. :- It is very importent not to over mix the batter.
  8. Divide the batter among the prepared muffin cups.
  9. Bake the muffins on the middle rack, until the tops are golden brown.
  10. Insert a toothpick into the center and if it comes out clean, then the muffins are done(approx 25 mins.).
