Beans-Egg Poriyal A simple side dish with beans and eggs 1/2 kg Beans2 nos Onions (finely minced)Curry leaves (A sprig)2 nos Green chillies (finely minced)Salt (As reqd)1/2 tsp Turmeric powder3/4 tsp Chilly powder1/4 tsp Cumin powder (Jeerakam)1/2 tsp Coriander powder1/2 tsp Ginger (grated)2 nos Garlic pods (finely minced)4 nos EggsOil (As reqd) Cut beans into small pieces like for poriyal.Steam and keep aside. Fry onion and green chillies, till the onions turn brown.Lower the flame and add curry leaves, salt, turmeric powder, chilly powder, cumin powder, coriander powder, ginger, garlic and fry for 3 -4 mins. Add the beans and fry for a further 3 - 5 mins. Add eggs and scramble fry till done.Remove from fire. Tamil
