2 cups Beetroot (grated)1 cup Hot water1 ltr Milk1 tin Condensed milk (optional)1 cup Sugar1/2 tsp Cardamom powder3 tbsp Ghee50 gm Cashew nuts Cook grated beetroot by adding 1 cup hot water till it gets cooked well and all the water content evaporates. Add 2 tablespoon ghee and saute till the beetroot is roasted well in the ghee. Add hot milk along with either sugar or condensed milk (beetroot is sweet in taste, so we don`t have to add both sugar and condensed milk).Cook well till it reaches required consistency. Sprinkle cardamom powder and mix well. Heat 2 tablespoon ghee in a pan and fry cashew nuts and sprinkle it along with the ghee over the payasam. :- Remove from fire and serve hot.Tips:- If you are using condensed milk instead of sugar, check the sweetness of the payasam and add more sugar if needed.:-You can make carrot paayasam in similar way by using grated carrot instead of beetroot.
