For preparing bhagara brinjal, a tasty Hyderabadi dish, first take a pan and pour sufficient oil for deep frying. Slit the brinjals and fry over high heat until tender. Remove from oil and keep aside.
Grind the grated coconut, roasted coriander, cumin and sesame seeds using a little water to a fine paste.
In the remaining oil, saute sliced onions, ginger and garlic till the onions are golden in color. Add curry leaves and ground mixture. Saute well till oil accumulates on top.
Add red pepper, turmeric and required salt. Mix well and add the fried brinjals. Add some water, just enough to maintain the thick consistency and bring to boil.
Lower the flame and simmer bhagara brinjal for a few minutes with a lid on.
Remove bhagara brinjal when done and garnish with coriander leaves.
