Bitter Gourd Pickle Easy Pickle made with bittergourd or pavakka 3 nos Bitter gourd (Pavakka)7 - Small onions (Kunjulli)1 tbsp Chilly powderAsafoetida (A pinch, Kayam)7-8 nos Garlic pods2" piece Ginger (cut finely)7-8 Green chillies (cut lengthwise)1 tsp Mustard seeds1 or Vinegar5 tbsp OilSalt (As reqd); (You can increase the no. of green chillies depending on how hot you want it to be.) Cut bittergourd into small pieces and leave it in salt water for an hour or so.Drain the water and squeeze out the excess water from the bitter gourd and keep it aside.Heat oil in a pan.Fry onions, green chilly, ginger and garlic.When onion becomes brown, add chilly powder and asafoetida.Add the bittergourd pieces and vinegar and mix well.Add salt as required.Cook till bittergourd is cooked.Splutter mustard seeds in another pan and add this to the above bitter gourd mixture.Remove from flame.
