BitterGourd Fry

Spicy Bittergourd(Pavakka) fry without any bitterness

Ingredients
  

  • 5 to Bittergourd Pavakka
  • 3 nos Onions or small ones 5 nos, big
  • 4 to Garlic pods
  • 2 to Dhalia roasted
  • 2 spoon Dry coconut powder or small pieces if it is whole
  • Salt As reqd
  • Red chilly powder As reqd
  • 1/2 tsp Cumin seeds Jeerakam
  • Turmeric powder
  • Oil As reqd

Instructions
 

  • Scrape the bitter gourds, not completly, only superficially and then, cut them into round, thin pieces.
  • Place them into a plate or bowl.
  • Add turmeric powder and salt and mix well. Keep aside for 1 hr.
  • Grind together garlic, dhalia, coconut, salt, red chilly powder, cumin seeds and turmeric powder.
  • After an hour, mix the bitter grouds thoroughly, squeezing them in between.
  • Take a few pieces and squeeze them till the water drains. Do it with all the pieces.
  • Heat oil in a pan.
  • Shallow fry or deep fry till the bitter gourd pieces become crispy enough.
  • :- Fry only a few pieces at a time so that they get fried well.
  • After all the pieces are fried, add the cut onions into the remaining oil.
  • When the onions turn golden brown, add half the amount of the ground masala.
  • Mix well.
  • Add the fried bitter gourd pieces.
  • Add the remaining masala and mix well.
  • Simmer the stove, close the lid and cook for 5 - 10 mins.
  • :- To get rid of the bitterness, squeeze the pieces well. It all depends on your hand work. I prepared it & it come out yummy. I would like to say that there will be a slight bitterness which is edible.
