Brinjal Curry - Andra Style Brinjal(Vazhuthananga) curry - Brinjal curry - Andra Style 8 nos Brinjal (Vazhuthananga)4 tbsp Bengal gram (Kadalaprippu)2 tbsp Black gram (Uzhunnuparippu)1 tbsp Coriander seeds1/2 tbsp Cumin seeds (Jeerakam)4 nos Red chillies (Kollamulaku)2 nos Onion (cut into small pieces, big)1/2 tbsp Red chilly powderSugar (A pinch)1 tbsp Coriander powderSalt (As reqd)5 tbsp OilCoriander leaves for garnishing Heat 2 tbsp of oil in a pan or a kadai.Add Bengal gram, black gram, cumin seeds, coriander seeds and red chillies and fry, till it smells good.Allow them to cool and grind them to a fine powder.Add a onion and grind them again into a fine paste.Heat 3 tbsp of ool in the same pan.Add the remaining onion and fry, till they become golden brown.Add the paste to the fried onions and saute.Add some water along with all the powders and cook for 5 mins.Take the brinjals and cut into four parts. Do not cut the topmost portion. Leave it as it is.Put the paste in the middle of the brinjal and fry it for 7 mins.Add remaining paste, if left.Garnish with coriander leaves.:- Serve hot with White Rice. Andhra
