Brinjal N Drumstick Fry Side dish for rice items 2 nos Drumsticks (chopped to abt 3" long pieces, Muringakkai)1/4 kg Brinjal (chopped lengthwise about 1/2" thickness)(put the brinjal in water soon after u chop them to avoid change of color, Vazhuthananga)1 no Onion (finely chopped, large)2 nos Green chillies (slit)1 sprig Curry leaves1 no Tomato (diced, large)4 - Garlic pods (crushed with skin)1 tsp Chilly powder1/2 tsp Coriander powderSalt (As reqd)Turmeric powder (A pinch)1/2 tsp Mustard seeds1/2 tsp Cumin seeds (optional, Jeerakam)Oil for frying Heat 2 - 3 tsp of oil in a pan.Splutter mustard seeds followed by cumin seeds.Add the finely chopped onions, slit green chillies, crushed garlic and curry leaves.When the onions turn transparent, add the diced tomatoes.When the tomatoes turn pulpy add the chilly powder, coriander powder, tumeric powder and salt to taste. Add the drumsticks and pour water to cover everything.Cover and allow it to cook.When the drumsticks are almost done, add the brinjal pieces. Cover and allow it to cook.Check for salt and spice. Once all the water evaporates and the veg are nicely fried, remove from fire.:- Variations: You can make this recipe with just drumsticks or just brinjal too.:- Good side dish for sambar rice, rasam rice, curd rice, and if you are anything like me, you would enjoy it with just hot plain rice.
